Hot Bacon Spinach Salad

I remember my grandma making a delicious hot bacon salad when I was growing up, so I thought that I would try it a few weeks ago.  I cut up some bacon, cooked it on the stove, and drained some of the grease.  Then, I decided to add some onions and sugar.  I caramelized them and added them to spinach and beets.  The results were just as I remembered: delicious and a taste of spring!

My mom made a version of that salad, too. I think she called it wilted lettuce, which seems like a charming name!
