Roasted Vegetable Dip

David bought me The Barefoot Contessa Cookbook for Valentine's day and the first recipe I had to try was a Roasted Vegetable Dip. It looked soooo good in the book and it did not disappoint. To give you an idea, David and I consumed it ALL in one setting along with an entire bag of pita chips. Bad, bad, bad. But soooo good.

If you want to try the recipe, here it is. I did not add garlic and I added more eggplant. So very tasty.
