Snow Day Dumplings

Today the weather was so snowy, so I felt like making a delicious soup. To me, nothing is more comforting than a big pot of chicken soup and dumplings, so I thought I would share my little recipe. It is so easy to make on a cold day like today. Plus, the little dumplings look like snowballs!

You need:
- two stalks celery
- two carrots
- 1/2 onion
- chicken broth
- flour
- water
- salt
- 1 T olive oil

Find a sauce pan and put the olive oil in the pan. Turn the pan on low. Dice the onion, celery, and carrots. Saute the vegetables until slightly soft.

In the meantime, mix appx. 1 cup flour with 2 T water. Continue to mix and add water until the flour is all well moistened, but sticky and not watery.

Add 3 cups of chicken broth to the veggies and turn on high. Spoon the flour mixture into the broth until the dumplings have cooked. Add more broth as needed. The mixture will become thicker as the dumplings cook. Salt and pepper to taste.
