Summer Cobb Salad

I adore salads in the summer. This week David made me a delicious cobb salad. He started with spinach, added bacon, tomatoes, onions, and avocado. He also toasted homemade croutons in the oven (cut up some old bread, add olive oil, spice with seasoned salt). The key to a good cobb salad is to mix everything really well. This makes the avocado spread everywhere and it creates a creamy consistency.

That does sound good. I was musing on your interesting reviews of K. C restaurants, and realized that it must be extra fun for you to be trying these exciting new places to eat, since in Farber and Kirksville there weren't many restaurants from which to choose!
